I understand there will be a patch soon to restore that. We all like to make our own palettes for varies things and I can't find how to do that with 5.
There were a couple features from 4 that some of us lamented over and so a fix is in the works, I think.

The black/white photo - no clue. Are white bead colors turned on (Usage column)? Try fiddling with Color Conversion on Main Design Screen (left side). This is the Exact, Sharp or Smooth conversion from photo. Nick is a nickname required for InventoryManager. When adding/deleting columns/rows, before clicking on finish you have to click on Add or Remove button.
There are 2 Dewey Delica Color Group sorted palettes. The regular one has all colors turned on for Usage. The safe palette only has the safe colors (non-shinny) beads turned on. You can turn on all colors for usage from Menu>Edit down at bottom. You should be able to get BC 4 from support and reinstall it on your computer. It's OK to have both versions on your computer.

Perhaps I am missing something here-----
What image would you like to use? I pick my image and click NEXT
What bead palette would you like to use? There are 3 so I chose the 3rd one and checked all beads
What pattern parameters would you like to use? 8 x 10
Nick - gave a name
Hit apply - and then I get 26,560 DB0010 beads and nothing else
I did not see where there was a "sharp" or any other button for me to play with. Have a missed something>
